
Antipasti Board with Prosciutto, Mozzarella and Grilled Vegetables

Pairs with
Italian antipasti demands Italian company — a crisp white, a rosé or a light red. Or do as the Italians do: open everything and let your guests choose.
Ingredients
- 200g prosciutto di Parma
- 2 burrata or 2 buffalo mozzarella balls
- 1 courgette, in strips
- 1 aubergine, sliced
- 1 red pepper, in wedges
- 200g artichoke hearts (tinned), drained
- 150g olives (mixed)
- 100g sun-dried tomatoes
- Capers
- Olive oil, balsamic glaze
- Fresh basil
- Breadsticks or focaccia
Method
- 11. Grill courgette, aubergine and pepper in olive oil over high heat until soft with charred lines.
- 22. Arrange the prosciutto in elegant folds on a large board.
- 33. Tear the burrata or mozzarella open in the centre of the board.
- 44. Place grilled vegetables, artichokes, olives, sun-dried tomatoes and capers around.
- 55. Drizzle with olive oil and balsamic glaze, scatter basil.
- 66. Serve with breadsticks or focaccia.
