
Beef Tataki with Ponzu and Wasabi

Ingredients
- 300g beef fillet, in one piece
- 1 tbsp neutral oil
- Ponzu: 3 tbsp soy, 2 tbsp lemon juice, 1 tbsp rice vinegar
- Wasabi
- Spring onion, thinly sliced
- Daikon, thinly sliced
- Sesame seeds
Method
- 11. Salt the beef. Heat oil in a pan until smoking hot.
- 22. Sear the beef 30 seconds per side — it should be raw inside.
- 33. Place immediately on ice or in the fridge for 5 minutes.
- 44. Slice thinly against the grain.
- 55. Arrange on a plate with daikon and spring onion.
- 66. Drizzle ponzu, dot wasabi, scatter sesame seeds.
