Beef Tataki with Ponzu and Wasabi

Beef fillet's tenderness and ponzu's umami want a light red with fruitiness — or sparkling to match the Japanese elegance.

Ingredients

  • 300g beef fillet, in one piece
  • 1 tbsp neutral oil
  • Ponzu: 3 tbsp soy, 2 tbsp lemon juice, 1 tbsp rice vinegar
  • Wasabi
  • Spring onion, thinly sliced
  • Daikon, thinly sliced
  • Sesame seeds

Method

  1. 11. Salt the beef. Heat oil in a pan until smoking hot.
  2. 22. Sear the beef 30 seconds per side — it should be raw inside.
  3. 33. Place immediately on ice or in the fridge for 5 minutes.
  4. 44. Slice thinly against the grain.
  5. 55. Arrange on a plate with daikon and spring onion.
  6. 66. Drizzle ponzu, dot wasabi, scatter sesame seeds.
