Blinis with Bleak Roe and Crème Fraîche

The roe's salinity and the buckwheat blini's nutty tone were made for champagne — the drier, the better.

Ingredients

  • Blinis:
  • 100 g buckwheat flour
  • 50 g plain flour
  • 1 egg, separated
  • 200 ml milk
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp sugar
  • Butter for frying
  • Topping:
  • 150 g bleak roe
  • 200 ml crème fraîche
  • 1 red onion, finely chopped
  • Dill sprigs

Method

  1. 1Mix the flours, baking powder, salt and sugar. Whisk in the egg yolk and milk. Whisk the white to soft peaks and fold in.
  2. 2Fry small blinis in butter (about 5 cm) until the surface bubbles have burst. Flip.
  3. 3Serve warm with a dollop of crème fraîche, bleak roe, red onion and dill.
