
Chocolate budino with olive oil and flake salt

Banyuls or a young ruby port — the dark fruit marries perfectly with the bitter chocolate. The olive oil bridges the wine's fruit and the cocoa notes.
Ingredients
- 200 g dark chocolate (70%)|100 g butter|3 eggs|80 g caster sugar|30 g cocoa powder|2 tbsp good extra virgin olive oil|flake salt (Maldon)|whipped cream to serve
Method
- 1Preheat oven to 190 °C. Melt chocolate and butter over a bain-marie; let cool slightly. Whisk eggs and sugar until pale and fluffy, about 4 min. Fold in the chocolate mixture and sift in the cocoa. Divide among buttered ramekins. Bake 12–14 min — the top should be set but the centre still molten. Drizzle with olive oil and scatter flake salt just before serving.
