
Classic Chocolate Mousse

Pairs with
Chocolate mousse with sea salt — Port (ruby or tawny), Banyuls, or a powerful Maury. The salt flake ties the chocolate and wine together.
Ingredients
- 200g dark chocolate (70%)
- 4 eggs, separated
- 2 tbsp caster sugar
- 200ml double cream
- 1 tbsp cognac (optional)
- Pinch of salt
- Flaky sea salt to finish
Method
- 11. Melt the chocolate in a bowl over a water bath. Cool 5 minutes.
- 22. Stir in egg yolks one at a time. Add cognac if using.
- 33. Whip the cream to soft peaks. Fold into the chocolate in two additions.
- 44. Whisk egg whites with sugar and salt to stiff peaks. Fold in thirds — be gentle, you want to keep the air.
- 55. Divide into glasses or bowls. Chill at least 3 hours.
- 66. Finish with a flake of sea salt just before serving — it lifts the chocolate enormously.
