
Whole Roast Lemon Chicken with Herbs

One of the most wine-friendly dishes — works with almost any white, but a medium-bodied wine with good acidity lifts the lemon: Chablis, Chenin Blanc or Chardonnay.
Ingredients
- 1 whole chicken (about 1.5 kg)
- 2 lemons
- 1 whole head of garlic, halved
- 4 thyme sprigs
- 4 rosemary sprigs
- 3 tbsp butter, room temperature
- Flaky salt and black pepper
- 200 ml dry white wine
- 200 ml chicken stock
Method
- 1Preheat the oven to 200 °C. Rub the chicken with butter, salt and pepper. Halve one lemon and stuff inside the cavity with garlic and half the herbs.
- 2Place the chicken in a roasting tin. Pour wine and stock around. Slice the other lemon and scatter around the chicken with the remaining herbs.
- 3Roast for 1 hour and 15 minutes. Baste with the pan juices every 20 minutes. The chicken is done when the juices run clear from the thigh joint (core temperature 75 °C).
- 4Rest for 15 minutes. Serve with the pan juices and a simple salad.
