Fasolada – Greek White Bean Soup

Pairs with

Fasolada is Greece's national dish — simple, honest, olive-oil-rich. A medium white or light red with Mediterranean feel. Nothing fancy.

Ingredients

  • 400g dried white beans (soaked overnight) or 2 tins
  • 2 yellow onions, diced
  • 3 carrots, chunked
  • 3 celery stalks, sliced
  • 4 garlic cloves
  • 400g crushed tomatoes
  • 1l vegetable stock
  • 100ml olive oil
  • 2 bay leaves
  • Salt, black pepper
  • Fresh parsley
  • Bread for serving

Method

  1. 11. If using dried beans: boil for 45 minutes until almost tender.
  2. 22. Sauté onion, carrots, celery and garlic in olive oil for 5 minutes.
  3. 33. Add tomatoes, stock, bay leaves and beans.
  4. 44. Simmer 30–40 minutes until the beans are cooked through and the soup is thick.
  5. 55. Season with salt and pepper.
  6. 66. Serve with a generous glug of olive oil, parsley and bread.
