
Fasolada – Greek White Bean Soup

Fasolada is Greece's national dish — simple, honest, olive-oil-rich. A medium white or light red with Mediterranean feel. Nothing fancy.
Ingredients
- 400g dried white beans (soaked overnight) or 2 tins
- 2 yellow onions, diced
- 3 carrots, chunked
- 3 celery stalks, sliced
- 4 garlic cloves
- 400g crushed tomatoes
- 1l vegetable stock
- 100ml olive oil
- 2 bay leaves
- Salt, black pepper
- Fresh parsley
- Bread for serving
Method
- 11. If using dried beans: boil for 45 minutes until almost tender.
- 22. Sauté onion, carrots, celery and garlic in olive oil for 5 minutes.
- 33. Add tomatoes, stock, bay leaves and beans.
- 44. Simmer 30–40 minutes until the beans are cooked through and the soup is thick.
- 55. Season with salt and pepper.
- 66. Serve with a generous glug of olive oil, parsley and bread.
