Flammkuchen with Onion, Gruyère, and Crème Fraîche

Pairs with

Alsace in a dish — thin crust, crème fraîche, onion, and Gruyère. Pour Riesling or Crémant d'Alsace and you're home.

Ingredients

  • 1 ready-made pizza dough (or dough from 300g flour, 7g yeast, 150ml water, 2 tbsp olive oil, 1 tsp salt)
  • 200g crème fraîche
  • 2 large onions, thinly sliced into rings
  • 150g Gruyère, grated
  • 100g smoked bacon or pancetta, thinly sliced
  • Nutmeg
  • Black pepper
  • Fresh thyme

Method

  1. 11. Heat the oven to 250°C (or as high as it goes). If you have a pizza stone, heat it.
  2. 22. Roll the dough very thin (3mm) on baking paper — it should be rough and irregular, not circular.
  3. 33. Spread crème fraîche over the dough, leaving a 1cm border. Grate nutmeg and pepper over.
  4. 44. Distribute onion rings, Gruyère, and bacon evenly.
  5. 55. Slide in (with the paper) on the lowest shelf. Bake 10–12 minutes until the edges are dark brown and the bottom is crisp.
  6. 66. Scatter thyme, cut into irregular pieces with scissors or a knife. Serve immediately.
