
Flammkuchen with Onion, Gruyère, and Crème Fraîche

Pairs with
Alsace in a dish — thin crust, crème fraîche, onion, and Gruyère. Pour Riesling or Crémant d'Alsace and you're home.
Ingredients
- 1 ready-made pizza dough (or dough from 300g flour, 7g yeast, 150ml water, 2 tbsp olive oil, 1 tsp salt)
- 200g crème fraîche
- 2 large onions, thinly sliced into rings
- 150g Gruyère, grated
- 100g smoked bacon or pancetta, thinly sliced
- Nutmeg
- Black pepper
- Fresh thyme
Method
- 11. Heat the oven to 250°C (or as high as it goes). If you have a pizza stone, heat it.
- 22. Roll the dough very thin (3mm) on baking paper — it should be rough and irregular, not circular.
- 33. Spread crème fraîche over the dough, leaving a 1cm border. Grate nutmeg and pepper over.
- 44. Distribute onion rings, Gruyère, and bacon evenly.
- 55. Slide in (with the paper) on the lowest shelf. Bake 10–12 minutes until the edges are dark brown and the bottom is crisp.
- 66. Scatter thyme, cut into irregular pieces with scissors or a knife. Serve immediately.
