
Roast Pork Loin with Root Mash and Lingonberries

Pork with crispy crackling and root mash wants either a medium-bodied red or a full-bodied white — both meet the meat's juiciness and mash's earthiness.
Ingredients
- 1kg pork loin with crackling
- 2 tbsp olive oil
- Salt, black pepper
- 1 tbsp mustard
- Thyme
- Root mash: 400g potatoes, 200g swede, 200g carrots, butter, milk
- Lingonberry jam
- Gravy
Method
- 11. Score the crackling in tight lines. Rub in salt and oil.
- 22. Brush the meat side with mustard, scatter thyme.
- 33. Roast at 225°C for 20 minutes for crispy crackling, then reduce to 175°C.
- 44. Roast for a total of about 50–60 minutes (internal temp 65°C). Rest 15 minutes.
- 55. Root mash: Boil all root vegetables, mash with butter and milk.
- 66. Serve slices of pork with root mash, lingonberry jam and gravy.
