French Crêpes with Ham and Gruyère

Ingredients

  • Crêpes: 150g plain flour, 2 eggs, 300ml milk, 1 pinch salt, 2 tbsp melted butter
  • 8 slices ham
  • 200g gruyère, grated
  • Butter for frying
  • Dijon mustard
  • Salad to serve

Method

  1. 11. Whisk all crêpe ingredients into a smooth batter. Rest 10 minutes.
  2. 22. Melt a little butter in a frying pan. Pour in a thin ladle, cook 1 minute per side.
  3. 33. Place ham and gruyère on each crêpe. Fold into quarters.
  4. 44. Arrange filled crêpes in a baking dish, scatter extra cheese.
  5. 55. Grill at 220°C for 5–7 minutes until the cheese bubbles.
  6. 66. Spread with Dijon and serve with a simple salad.
