
French Crêpes with Ham and Gruyère

Ingredients
- Crêpes: 150g plain flour, 2 eggs, 300ml milk, 1 pinch salt, 2 tbsp melted butter
- 8 slices ham
- 200g gruyère, grated
- Butter for frying
- Dijon mustard
- Salad to serve
Method
- 11. Whisk all crêpe ingredients into a smooth batter. Rest 10 minutes.
- 22. Melt a little butter in a frying pan. Pour in a thin ladle, cook 1 minute per side.
- 33. Place ham and gruyère on each crêpe. Fold into quarters.
- 44. Arrange filled crêpes in a baking dish, scatter extra cheese.
- 55. Grill at 220°C for 5–7 minutes until the cheese bubbles.
