
Goat's Cheese Tart with Caramelised Onion and Thyme

The caramelised onion's sweetness and the goat's cheese tang want a medium white or rosé — Sancerre (white or rosé), Chenin Blanc.
Ingredients
- 1 sheet puff pastry
- 4 yellow onions, sliced
- 3 tbsp butter
- 1 tbsp brown sugar
- 2 tbsp balsamic vinegar
- 200 g chèvre, sliced
- 3 eggs
- 200 ml cream
- 4 thyme sprigs
- Salt and black pepper
Method
- 1Caramelise the onions in butter over medium heat for 20 minutes. Add sugar and vinegar. Cook 5 more minutes.
- 2Line a tart tin (24 cm) with the pastry. Blind-bake at 180 °C for 10 minutes.
- 3Spread the onion. Lay the goat's cheese on top. Whisk eggs and cream. Season and pour in. Scatter thyme.
- 4Bake at 180 °C for 25–30 minutes. Serve warm with a green salad.
