Goat's Cheese Tart with Caramelised Onion and Thyme

The caramelised onion's sweetness and the goat's cheese tang want a medium white or rosé — Sancerre (white or rosé), Chenin Blanc.

Ingredients

  • 1 sheet puff pastry
  • 4 yellow onions, sliced
  • 3 tbsp butter
  • 1 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • 200 g chèvre, sliced
  • 3 eggs
  • 200 ml cream
  • 4 thyme sprigs
  • Salt and black pepper

Method

  1. 1Caramelise the onions in butter over medium heat for 20 minutes. Add sugar and vinegar. Cook 5 more minutes.
  2. 2Line a tart tin (24 cm) with the pastry. Blind-bake at 180 °C for 10 minutes.
  3. 3Spread the onion. Lay the goat's cheese on top. Whisk eggs and cream. Season and pour in. Scatter thyme.
  4. 4Bake at 180 °C for 25–30 minutes. Serve warm with a green salad.
