Gratin Oysters with Parmesan and Herb Butter

Ingredients

  • 16 oysters, shucked (or ask your fishmonger)
  • Coarse salt to bed them in
  • Herb butter:
  • 80g room-temperature butter
  • 2 garlic cloves, finely grated
  • Small bunch of parsley, finely chopped
  • 1 tbsp lemon juice
  • Tabasco (2–3 drops)
  • 40g Parmesan, finely grated
  • 3 tbsp breadcrumbs

Method

  1. 11. Set the oven to grill/broil (250°C).
  2. 22. Mash the butter with garlic, parsley, lemon juice, and Tabasco.
  3. 33. Spread a layer of coarse salt on an oven-safe tray — the salt keeps the oysters stable. Nestle the oysters shell-side down.
  4. 44. Spoon a teaspoon of herb butter onto each oyster. Top with a mix of Parmesan and breadcrumbs.
  5. 55. Grill on the top shelf 3–4 minutes until the surface bubbles and turns golden — watch closely, it goes fast.
