
Gratin Oysters with Parmesan and Herb Butter

Ingredients
- 16 oysters, shucked (or ask your fishmonger)
- Coarse salt to bed them in
- Herb butter:
- 80g room-temperature butter
- 2 garlic cloves, finely grated
- Small bunch of parsley, finely chopped
- 1 tbsp lemon juice
- Tabasco (2–3 drops)
- 40g Parmesan, finely grated
- 3 tbsp breadcrumbs
Method
- 11. Set the oven to grill/broil (250°C).
- 22. Mash the butter with garlic, parsley, lemon juice, and Tabasco.
- 33. Spread a layer of coarse salt on an oven-safe tray — the salt keeps the oysters stable. Nestle the oysters shell-side down.
- 44. Spoon a teaspoon of herb butter onto each oyster. Top with a mix of Parmesan and breadcrumbs.
