Cured salmon with mustard-dill sauce

Ingredients

  • 800 g salmon fillet
  • 100 g sugar
  • 100 g salt
  • 1 bunch dill
  • 2 tbsp crushed black pepper. Mustard-dill sauce: 3 tbsp sweet mustard
  • 1 tbsp vinegar
  • 3 tbsp sugar
  • 100 ml rapeseed oil
  • 3 tbsp chopped dill
  • Salt and pepper

Method

  1. 1Mix sugar, salt, and pepper. Place half the salmon skin-side down, spread cure, dill, and remaining salmon on top. Wrap tightly, weigh down. Cure in fridge 48h, flip halfway. Make sauce: whisk mustard, vinegar, and sugar. Drizzle in oil while whisking. Stir in dill. Thinly slice salmon, serve with sauce.
