
Cured salmon with mustard-dill sauce

Ingredients
- 800 g salmon fillet
- 100 g sugar
- 100 g salt
- 1 bunch dill
- 2 tbsp crushed black pepper. Mustard-dill sauce: 3 tbsp sweet mustard
- 1 tbsp vinegar
- 3 tbsp sugar
- 100 ml rapeseed oil
- 3 tbsp chopped dill
- Salt and pepper
Method
- 1Mix sugar, salt, and pepper. Place half the salmon skin-side down, spread cure, dill, and remaining salmon on top. Wrap tightly, weigh down. Cure in fridge 48h, flip halfway. Make sauce: whisk mustard, vinegar, and sugar. Drizzle in oil while whisking. Stir in dill. Thinly slice salmon, serve with sauce.
