Greek Kleftiko – Slow-Baked Lamb

Pairs with

Kleftiko's slowly melted lamb and lemon acidity want a Greek red or a medium to full-bodied red with herbal spice notes.

Ingredients

  • 1.5kg lamb shanks or shoulder pieces
  • 4 garlic cloves, halved
  • 2 lemons, juiced and zested
  • 4 tbsp olive oil
  • 2 tsp oregano
  • 500g potatoes, chunked
  • 2 red peppers, in wedges
  • 200g feta, in blocks
  • Tomatoes, olives
  • Salt, black pepper

Method

  1. 11. Pierce the lamb, push garlic halves inside.
  2. 22. Marinate in lemon juice, olive oil, oregano, salt and pepper for at least 2 hours.
  3. 33. Place lamb, potatoes, peppers, tomatoes and olives in a deep baking dish.
  4. 44. Cover tightly with foil. Bake at 160°C for 3.5 hours.
  5. 55. Remove foil, place feta blocks on top. Bake 20 minutes more.
  6. 66. The meat should fall off the bone. Serve straight from the dish.
