Hanger Steak with Red Wine Shallots

The hanger steak's rich, mineral flavour and the sweet-sharp shallots want a medium-bodied red with good structure — Côtes du Rhône or Merlot.

Ingredients

  • 800 g hanger steak (onglet)
  • 2 tbsp olive oil
  • Flaky salt and black pepper
  • 2 tbsp butter
  • 2 thyme sprigs
  • Red wine shallots:
  • 6 shallots, sliced
  • 2 tbsp smör
  • 200 ml red wine
  • 1 tbsp red wine vinegar
  • 1 tbsp brown sugar
  • 1 thyme sprig
  • Salt

Method

  1. 1Red wine shallots: Cook the shallots in butter over medium heat for 10 minutes until soft and golden. Add wine, vinegar, sugar and thyme. Simmer for 15 minutes until most of the liquid has evaporated and the shallots are glossy.
  2. 2Remove the steak 30 minutes before cooking. Season generously.
  3. 3Heat olive oil in a cast-iron pan. Sear for 4 minutes per side for medium rare. Add butter and thyme for the last few minutes and baste.
  4. 4Rest for 8 minutes. Slice thinly against the grain.
  5. 5Serve with the red wine shallots and roasted potatoes.
