
Lobster Bisque

Ingredients
- 2 lobster shells (or crayfish/prawn shells)
- 2 tbsp butter
- 1 yellow onion, diced
- 1 carrot, diced
- 1 celery stalk
- 2 tbsp tomato paste
- 100ml cognac
- 200ml white wine
- 500ml fish stock
- 200ml cream
- Cayenne pepper
- Salt
- Fresh dill or chives
Method
- 11. Crush the shells. Fry in butter until coloured and fragrant.
- 22. Add onion, carrot and celery. Sauté 5 minutes.
- 33. Stir in tomato paste. Pour in cognac, flambé briefly.
- 44. Add wine and stock. Simmer 30 minutes.
- 55. Strain carefully, pressing all flavour from the shells.
- 66. Add cream, cayenne and salt. Simmer 5 minutes.
- 77. Serve with dill and optionally some lobster meat in the bottom.
