
Indian Dal with Tadka and Naan

The earthy sweetness of lentils and the warmth of spices love an aromatic white with some body — a viognier or off-dry riesling that meets the spice head-on.
Ingredients
- 300g red lentils, rinsed
- 1 yellow onion, diced
- 3 garlic cloves, grated
- 2cm ginger, grated
- 1 tbsp turmeric
- 1 tsp cumin
- 1 tsp garam masala
- 400g crushed tomatoes
- 600ml water
- Salt
- Tadka: 2 tbsp ghee, 1 tsp mustard seeds, 1 tsp cumin seeds, 2 dried chillies, 4 curry leaves
- 4 naan breads
- Fresh coriander to serve
Method
- 11. Sauté the onion in oil until soft, about 5 minutes. Add garlic and ginger, fry 1 minute.
- 22. Stir in turmeric, cumin and garam masala, fry 30 seconds.
- 33. Add lentils, crushed tomatoes and water. Bring to a boil, reduce heat and simmer 25–30 minutes until the lentils have broken down.
- 44. Season with salt and stir — the consistency should be creamy but not thick.
- 55. Tadka: Heat ghee in a small pan, fry mustard seeds until they pop, add cumin seeds, chillies and curry leaves. Pour the sizzling tadka over the dal.
- 66. Top with coriander and serve with warm naan.
