
Slow-Roasted Short Ribs with Balsamic

Ingredients
- 2 kg bone-in beef short ribs
- 2 tbsp olive oil
- 2 yellow onions, roughly chopped
- 4 carrots, chopped
- 4 garlic cloves, crushed
- 3 tbsp tomato paste
- 300 ml red wine
- 400 ml beef stock
- 3 tbsp balsamic vinegar
- 2 tbsp brown sugar
- 3 thyme sprigs
- 2 bay leaves
- Salt and black pepper
Method
- 1Preheat the oven to 160 °C. Season the ribs and brown in olive oil in an ovenproof casserole.
- 2Sauté onions, carrots and garlic. Stir in the tomato paste. Pour in wine, stock, balsamic and sugar. Add the herbs.
- 3Return the ribs. Bring to a boil, cover.
- 4Braise for 3.5–4 hours. For the last 30 minutes: remove the lid, increase to 200 °C and let the liquid reduce and glaze the ribs.
- 5Serve with polenta or mashed potatoes.
