Cheese and Charcuterie Board for a Crowd

Pairs with

A well-built board is a wine invitation — it forgives whatever's open. Put out a bottle each of something crisp and something red, and let guests find their own match.

Ingredients

  • 3 cheeses at different textures: a soft bloomy rind (brie or camembert), a firm aged (comté, gruyère, aged cheddar), a blue (roquefort or gorgonzola)
  • 200g prosciutto or serrano ham
  • 200g salami or fennel sausage, thinly sliced
  • 150g cornichons
  • 100g marinated olives
  • Fig jam or quince paste
  • Honey, ideally with the comb
  • Fresh figs or grapes
  • A handful of raw almonds
  • Good bread, sliced, and grissini or crackers

Method

  1. 11. Take the cheeses out of the fridge an hour before serving — cold cheese tastes of nothing.
  2. 22. Arrange the cheeses at the corners of a large board, giving each its own space.
  3. 33. Fold the prosciutto into loose ribbons rather than laying it flat.
  4. 44. Fill the gaps with meats, then the sweet elements (jam, honey, fruit), then the salty (olives, cornichons, almonds).
  5. 55. Serve bread separately so it stays crisp.
