
Beef Stroganoff with Mushrooms and Dijon

Stroganoff has the smoky, creamy, mustard-sharp profile that likes a red wine with soft tannins and some spice — a Côtes du Rhône, a Crozes-Hermitage, or a mature Rioja.
Ingredients
- 600g beef fillet, in thin strips
- 300g mixed mushrooms, sliced
- 1 onion, finely chopped
- 2 garlic cloves, chopped
- 2 tbsp butter
- 1 tbsp olive oil
- 100ml white wine or cognac
- 200ml cream
- 2 tbsp Dijon mustard
- 1 tbsp tomato paste
- Flaky sea salt, black pepper
- Parsley, cooked rice or pasta
Method
- 11. Season the beef. Heat olive oil in a large pan over high heat. Sear the meat quickly in batches — 1 minute per batch, no more. Remove.
- 22. Reduce to medium. Add butter, cook mushrooms 4 minutes until golden. Add onion and garlic, sauté 3 minutes.
- 33. Pour in wine, scraping up everything. Reduce by half.
- 44. Stir in cream, mustard, and tomato paste. Simmer 5 minutes.
- 55. Return the beef, warm 1 minute — no more or it toughens.
- 66. Scatter parsley, serve with rice or wide pasta.
