Beef Stroganoff with Mushrooms and Dijon

Stroganoff has the smoky, creamy, mustard-sharp profile that likes a red wine with soft tannins and some spice — a Côtes du Rhône, a Crozes-Hermitage, or a mature Rioja.

Ingredients

  • 600g beef fillet, in thin strips
  • 300g mixed mushrooms, sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, chopped
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 100ml white wine or cognac
  • 200ml cream
  • 2 tbsp Dijon mustard
  • 1 tbsp tomato paste
  • Flaky sea salt, black pepper
  • Parsley, cooked rice or pasta

Method

  1. 11. Season the beef. Heat olive oil in a large pan over high heat. Sear the meat quickly in batches — 1 minute per batch, no more. Remove.
  2. 22. Reduce to medium. Add butter, cook mushrooms 4 minutes until golden. Add onion and garlic, sauté 3 minutes.
  3. 33. Pour in wine, scraping up everything. Reduce by half.
  4. 44. Stir in cream, mustard, and tomato paste. Simmer 5 minutes.
  5. 55. Return the beef, warm 1 minute — no more or it toughens.
  6. 66. Scatter parsley, serve with rice or wide pasta.
