Blistered Padrón Peppers with Sea Salt and Lemon

One in ten Padróns is unexpectedly spicy — that's part of the game. The bright acidity in sparkling or a crisp white cuts through the char and cools any surprise heat.

Ingredients

  • 400g Padrón peppers
  • 3 tbsp olive oil
  • Flaky sea salt
  • 1 lemon, cut in wedges

Method

  1. 11. Wash the peppers and dry them thoroughly — wet peppers spit angrily in hot oil.
  2. 22. Heat the olive oil in a large heavy pan over high heat until it just starts to shimmer.
  3. 33. Add the peppers in a single layer. Leave them alone for 2 minutes so they blister on one side.
  4. 44. Toss and cook another 2–3 minutes until the skins are charred in patches and the peppers have collapsed slightly.
  5. 55. Tip onto a plate, scatter generously with sea salt, and serve with lemon wedges.
