
Blistered Padrón Peppers with Sea Salt and Lemon

One in ten Padróns is unexpectedly spicy — that's part of the game. The bright acidity in sparkling or a crisp white cuts through the char and cools any surprise heat.
Ingredients
- 400g Padrón peppers
- 3 tbsp olive oil
- Flaky sea salt
- 1 lemon, cut in wedges
Method
- 11. Wash the peppers and dry them thoroughly — wet peppers spit angrily in hot oil.
- 22. Heat the olive oil in a large heavy pan over high heat until it just starts to shimmer.
- 33. Add the peppers in a single layer. Leave them alone for 2 minutes so they blister on one side.
- 44. Toss and cook another 2–3 minutes until the skins are charred in patches and the peppers have collapsed slightly.
- 55. Tip onto a plate, scatter generously with sea salt, and serve with lemon wedges.
