
Red Wine Poached Pears with Mascarpone

The red wine syrup creates a natural bridge to the same wine — or elevate with Banyuls, Recioto or late-harvest Pinot Noir.
Ingredients
- 6 pears (Conference or Williams), peeled with stem intact
- 750 ml red wine
- 200 g sugar
- 1 cinnamon stick
- 2 star anise
- 1 vanilla pod, split
- Peel of 1 orange
- 200 g mascarpone
- 2 tbsp icing sugar
- 1 tsp vanilla paste
Method
- 1Simmer wine, sugar and spices in a saucepan. Add the pears. Poach for 30–40 minutes until tender (a knife should slide in without resistance). Turn halfway.
- 2Remove the pears. Reduce the liquid to a syrup (about 10 minutes).
- 3Mix mascarpone with icing sugar and vanilla.
- 4Serve the pears with the red wine syrup and a spoonful of mascarpone.
