Red Wine Poached Pears with Mascarpone

Prep time: 60 minServes: 6

The red wine syrup creates a natural bridge to the same wine — or elevate with Banyuls, Recioto or late-harvest Pinot Noir.

Ingredients

  • 6 pears (Conference or Williams), peeled with stem intact
  • 750 ml red wine
  • 200 g sugar
  • 1 cinnamon stick
  • 2 star anise
  • 1 vanilla pod, split
  • Peel of 1 orange
  • 200 g mascarpone
  • 2 tbsp icing sugar
  • 1 tsp vanilla paste

Method

  1. 1Simmer wine, sugar and spices in a saucepan. Add the pears. Poach for 30–40 minutes until tender (a knife should slide in without resistance). Turn halfway.
  2. 2Remove the pears. Reduce the liquid to a syrup (about 10 minutes).
  3. 3Mix mascarpone with icing sugar and vanilla.
  4. 4Serve the pears with the red wine syrup and a spoonful of mascarpone.
