
Black Bean and Jalapeño Quesadilla

Jalapeño's heat and beans' earthiness want a rosé or crisp white that refreshes — nothing heavy, just refreshment.
Ingredients
- 4 large tortillas
- 400g black beans (tinned), drained and roughly mashed
- 200g grated cheese (cheddar or Oaxaca)
- 2 jalapeños, sliced
- 1 red onion, diced
- 1 tsp cumin
- Butter for frying
- Guacamole, sour cream, salsa to serve
Method
- 11. Mix beans with cumin, onion and a little salt.
- 22. Place a tortilla in a dry pan. Spread beans on one half, scatter cheese and jalapeños.
- 33. Fold and fry in butter 2–3 minutes per side until golden and the cheese melts.
- 44. Repeat with remaining tortillas.
- 55. Cut into thirds and serve with guacamole, sour cream and salsa.
