
Ratatouille with Goat Cheese and Basil

Provence's classic dish wants Provençal company — a dry rosé with herbal notes or a light red that doesn't overshadow the natural sweetness of the vegetables.
Ingredients
- 2 courgettes, sliced
- 1 aubergine, sliced
- 3 tomatoes, sliced
- 1 red pepper, in rings
- 1 yellow pepper, in rings
- 1 yellow onion, thinly sliced
- 4 garlic cloves, minced
- 400g crushed tomatoes
- 3 tbsp olive oil
- 1 tsp thyme
- 1 tsp oregano
- Salt, black pepper
- 150g goat cheese
- Fresh basil
Method
- 11. Pour crushed tomatoes, garlic, half the olive oil and the herbs into a baking dish. Season.
- 22. Layer courgette, aubergine, tomatoes, peppers and onion in neat rows on top.
- 33. Drizzle with remaining oil, season with salt and pepper.
- 44. Cover with foil and bake at 200°C for 30 minutes.
- 55. Remove foil, crumble over the goat cheese and bake another 15 minutes until the vegetables are soft and the cheese has coloured.
- 66. Top with basil and serve with bread.
