
Salad with Warm Goat's Cheese, Walnuts, and Honey Dressing

Pairs with
Warm goat's cheese, honey, and walnuts — a three-chord combo that gives an off-dry white (a Loire Chenin or a Vouvray) plenty of flavours to play with. Rosé works too if it's summer.
Ingredients
- 4 rounds of goat's cheese (about 1cm thick, cut from a log)
- 2 tbsp breadcrumbs
- 1 tbsp olive oil
- 150g mixed salad leaves (rocket, frisée, baby spinach)
- 60g walnuts, toasted
- 1 pear, thinly sliced
- Dressing:
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- Flaky sea salt, black pepper
Method
- 11. Roll the goat's cheese rounds in breadcrumbs. Fry in olive oil in a small pan 1 minute per side until golden and melting at the edges.
- 22. Whisk the dressing together.
- 33. Divide salad leaves across 4 plates. Add pear slices and walnuts on top.
- 44. Place a warm goat's cheese round in the centre of each plate.
- 55. Drizzle dressing over.
