
Seared Tuna with Sesame Crust and Ponzu

The tuna's clean, almost meaty flavour and the ponzu's acidity want a crisp, mineral white — Sancerre, Grüner Veltliner or dry Riesling.
Ingredients
- 4 tuna steaks (sashimi-grade, about 180 g each)
- 4 tbsp mixed sesame seeds (black and white)
- 2 tbsp rapeseed oil
- Flaky salt
- Ponzu:
- 3 tbsp soy sauce
- 2 tbsp lemon juice
- 1 tbsp rice vinegar
- 1 tbsp mirin
- Serving:
- Grated daikon, wasabi, pickled ginger, spring onion
Method
- 1Press sesame seeds onto all sides of the tuna. Season with flaky salt.
- 2Heat rapeseed oil in a pan until smoking. Sear the tuna for 30–45 seconds per side — it should be raw in the centre.
- 3Slice thinly. Drizzle ponzu over. Serve with daikon, wasabi and pickled ginger.
