
Tagliata di Manzo with Rocket and Parmesan

Ingredients
- 800 g rib-eye or sirloin steak, in one piece
- 3 tbsp extra virgin olive oil
- Flaky salt and coarsely ground black pepper
- 100 g rocket
- 80 g Parmesan, shaved
- 1 lemon, juiced
- 1 tbsp aged balsamic vinegar
- Toasted pine nuts to garnish
Method
- 1Remove the steak from the fridge 45 minutes before cooking. Rub with 1 tbsp olive oil, salt and generous pepper.
- 2Heat a cast-iron pan until smoking. Sear the steak for 3–4 minutes per side for medium rare. Rest for 8 minutes under foil.
- 3Arrange the rocket on a large platter. Slice the steak 1 cm thick on the bias against the grain and lay over the rocket.
- 4Drizzle with the remaining olive oil, lemon juice and balsamic vinegar. Top with shaved Parmesan and pine nuts. Serve immediately.
