Tagliata di Manzo with Rocket and Parmesan

The simple, meat-focused format lets a red wine with ripe fruit tones and soft tannins shine without competition.

Ingredients

  • 800 g rib-eye or sirloin steak, in one piece
  • 3 tbsp extra virgin olive oil
  • Flaky salt and coarsely ground black pepper
  • 100 g rocket
  • 80 g Parmesan, shaved
  • 1 lemon, juiced
  • 1 tbsp aged balsamic vinegar
  • Toasted pine nuts to garnish

Method

  1. 1Remove the steak from the fridge 45 minutes before cooking. Rub with 1 tbsp olive oil, salt and generous pepper.
  2. 2Heat a cast-iron pan until smoking. Sear the steak for 3–4 minutes per side for medium rare. Rest for 8 minutes under foil.
  3. 3Arrange the rocket on a large platter. Slice the steak 1 cm thick on the bias against the grain and lay over the rocket.
  4. 4Drizzle with the remaining olive oil, lemon juice and balsamic vinegar. Top with shaved Parmesan and pine nuts. Serve immediately.
