
Thai Massaman Curry with Chicken

Massaman's peanut richness and cinnamon warmth want an aromatic white with some roundness — viognier or an off-dry riesling that meets the spice.
Ingredients
- 600g chicken thighs, cut into pieces
- 3 tbsp Massaman curry paste
- 400ml coconut milk
- 200ml chicken stock
- 300g waxy potatoes, cubed
- 1 yellow onion, in wedges
- 100g roasted peanuts
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 2 tbsp tamarind paste
- 2 bay leaves
- 1 cinnamon stick
- Jasmine rice to serve
Method
- 11. Fry the curry paste in a little oil for 1 minute. Add the cream from the coconut milk (the thick part) and fry until the oil separates.
- 22. Brown the chicken in the paste for 3 minutes.
- 33. Pour in the rest of the coconut milk and stock. Add potatoes, onion, bay leaves and cinnamon.
- 44. Simmer 25–30 minutes until potatoes are tender and chicken is cooked through.
- 55. Season with fish sauce, palm sugar and tamarind.
- 66. Scatter peanuts and serve with jasmine rice.
