
Massaman Beef Curry

Massaman's sweet spice and the nutty peanut tone match a full-bodied red with dark fruit and soft tannins — Grenache or Zinfandel.
Ingredients
- 800 g beef chuck, cut into 4 cm pieces
- 400 ml coconut milk
- 200 ml coconut cream
- 3 tbsp Massaman curry paste
- 2 tbsp fish sauce
- 2 tbsp palm sugar or brown sugar
- 2 tbsp tamarind paste
- 300 g waxy potatoes, cut into chunks
- 1 yellow onion, cut into wedges
- 50 g roasted peanuts
- 3 cardamom pods
- 1 cinnamon stick
- 2 star anise
- 2 bay leaves
- 2 tbsp rapeseed oil
Method
- 1Heat the oil in a heavy pot. Fry the curry paste for 2 minutes. Add the coconut cream and stir until the oil separates.
- 2Brown the beef in the paste for 3 minutes. Pour in the coconut milk. Add cardamom, cinnamon, star anise, bay leaves, fish sauce, sugar and tamarind.
- 3Bring to a boil, reduce the heat and simmer covered for 1.5 hours.
- 4Add potatoes and onion. Simmer for a further 30 minutes until everything is tender.
- 5Scatter with roasted peanuts. Serve with jasmine rice.
