Massaman Beef Curry

Pairs with

Massaman's sweet spice and the nutty peanut tone match a full-bodied red with dark fruit and soft tannins — Grenache or Zinfandel.

Ingredients

  • 800 g beef chuck, cut into 4 cm pieces
  • 400 ml coconut milk
  • 200 ml coconut cream
  • 3 tbsp Massaman curry paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar or brown sugar
  • 2 tbsp tamarind paste
  • 300 g waxy potatoes, cut into chunks
  • 1 yellow onion, cut into wedges
  • 50 g roasted peanuts
  • 3 cardamom pods
  • 1 cinnamon stick
  • 2 star anise
  • 2 bay leaves
  • 2 tbsp rapeseed oil

Method

  1. 1Heat the oil in a heavy pot. Fry the curry paste for 2 minutes. Add the coconut cream and stir until the oil separates.
  2. 2Brown the beef in the paste for 3 minutes. Pour in the coconut milk. Add cardamom, cinnamon, star anise, bay leaves, fish sauce, sugar and tamarind.
  3. 3Bring to a boil, reduce the heat and simmer covered for 1.5 hours.
  4. 4Add potatoes and onion. Simmer for a further 30 minutes until everything is tender.
  5. 5Scatter with roasted peanuts. Serve with jasmine rice.
