Tuna Tartare with Soy, Sesame, and Avocado

Raw fish and soy want a wine that stays out of the way but still has something to say — a mineral-driven sparkling or a light white with citrus character does the job quietly.

Ingredients

  • 300g sashimi-grade tuna, cut into 5mm dice
  • 1 tbsp Japanese soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • ½ tsp freshly grated ginger
  • 1 ripe avocado, diced
  • Juice of 1 lime
  • 1 tbsp toasted sesame seeds
  • 1 spring onion, thinly sliced
  • Chilli flakes (optional)
  • Wonton chips or thin rice crackers to serve

Method

  1. 11. Gently toss the tuna with soy, sesame oil, rice vinegar, and ginger. Chill 10 minutes.
  2. 22. Toss the avocado dice in half the lime juice to stop them browning.
  3. 33. Divide avocado in the centre of 4 plates (or use a ring mould if you want to be tidy). Pile the tuna tartare on top.
  4. 44. Finish with sesame seeds, spring onion, the remaining lime juice, and chilli flakes if you like.
  5. 55. Serve with chips or rice crackers alongside.
