
Tuna Tartare with Soy, Sesame, and Avocado

Raw fish and soy want a wine that stays out of the way but still has something to say — a mineral-driven sparkling or a light white with citrus character does the job quietly.
Ingredients
- 300g sashimi-grade tuna, cut into 5mm dice
- 1 tbsp Japanese soy sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar
- ½ tsp freshly grated ginger
- 1 ripe avocado, diced
- Juice of 1 lime
- 1 tbsp toasted sesame seeds
- 1 spring onion, thinly sliced
- Chilli flakes (optional)
- Wonton chips or thin rice crackers to serve
Method
- 11. Gently toss the tuna with soy, sesame oil, rice vinegar, and ginger. Chill 10 minutes.
- 22. Toss the avocado dice in half the lime juice to stop them browning.
- 33. Divide avocado in the centre of 4 plates (or use a ring mould if you want to be tidy). Pile the tuna tartare on top.
- 44. Finish with sesame seeds, spring onion, the remaining lime juice, and chilli flakes if you like.
- 55. Serve with chips or rice crackers alongside.
