Tuna Tataki with Ponzu and Sesame

Raw tuna with ponzu wants a wine that's equally clean and elegant — a mineral white or sparkling that doesn't overpower the silky texture of the fish.

Ingredients

  • 400g sashimi-grade tuna
  • 2 tbsp sesame seeds (black and white)
  • 1 tbsp neutral oil
  • Ponzu: 3 tbsp soy sauce, 2 tbsp lemon juice, 1 tbsp rice vinegar, 1 tsp sesame oil
  • Spring onion, thinly sliced
  • Daikon or radish, thinly sliced
  • Ginger, grated

Method

  1. 11. Roll the tuna in sesame seeds until coated on all sides.
  2. 22. Heat oil in a pan until smoking hot. Sear the tuna for 30 seconds per side — it should be raw in the centre.
  3. 33. Place on ice or in the fridge for 5 minutes.
  4. 44. Mix the ponzu sauce.
  5. 55. Slice the tuna thinly. Arrange on a plate with daikon and spring onion.
  6. 66. Drizzle with ponzu, top with grated ginger.
