
Tuna Tataki with Ponzu and Sesame

Raw tuna with ponzu wants a wine that's equally clean and elegant — a mineral white or sparkling that doesn't overpower the silky texture of the fish.
Ingredients
- 400g sashimi-grade tuna
- 2 tbsp sesame seeds (black and white)
- 1 tbsp neutral oil
- Ponzu: 3 tbsp soy sauce, 2 tbsp lemon juice, 1 tbsp rice vinegar, 1 tsp sesame oil
- Spring onion, thinly sliced
- Daikon or radish, thinly sliced
- Ginger, grated
Method
- 11. Roll the tuna in sesame seeds until coated on all sides.
- 22. Heat oil in a pan until smoking hot. Sear the tuna for 30 seconds per side — it should be raw in the centre.
- 33. Place on ice or in the fridge for 5 minutes.
- 44. Mix the ponzu sauce.
- 55. Slice the tuna thinly. Arrange on a plate with daikon and spring onion.
- 66. Drizzle with ponzu, top with grated ginger.
