
Game-Stuffed Cabbage Rolls with Cream Sauce

Cabbage rolls with game mince and lingonberries — a Swedish autumn classic that wants a medium-bodied red with soft tannins and berry notes.
Ingredients
- 1 white cabbage head
- 500g game mince (elk, venison or a mix)
- 100g rice, cooked
- 1 egg
- 1 yellow onion, finely diced
- 100ml milk
- Salt, black pepper, allspice
- Butter for frying
- 200ml cream
- 200ml beef stock
- Lingonberry jam
Method
- 11. Boil the cabbage in salted water for 5 minutes. Peel off the leaves.
- 22. Mix game mince, rice, egg, onion, milk and spices.
- 33. Place a spoonful of filling on each cabbage leaf. Fold and roll up.
- 44. Brown the rolls in butter in a frying pan.
- 55. Place in a baking dish, pour stock and cream around.
