
Garlic Prawns with Chilli and Parsley

Garlic, chilli, and white wine in the pan ask for the same thing in the glass — a crisp white with some body, like an Albariño or an unfiltered Sauvignon Blanc, handles fat and heat without backing down.
Ingredients
- 500g large raw prawns, peeled
- 6 tbsp olive oil
- 4 garlic cloves, thinly sliced
- 1 red chilli, thinly sliced (or ½ tsp chilli flakes)
- 100ml dry white wine
- Juice of 1 lemon
- Large handful of parsley, roughly chopped
- Flaky sea salt
- Good bread for mopping
Method
- 11. Warm the olive oil in a large frying pan or cast-iron skillet over medium-high heat.
- 22. Add garlic and chilli, cook 30 seconds until the garlic just starts to turn gold — no more.
- 33. Turn the heat to high, add the prawns in a single layer. Cook 1 minute without stirring.
- 44. Flip, pour in the wine and lemon juice. Let it bubble 2 minutes until the prawns are pink and cooked through.
- 55. Take off the heat, scatter with parsley and sea salt.
- 66. Serve in the pan with bread to mop up the juices.
