Garlic Prawns with Chilli and Parsley

Garlic, chilli, and white wine in the pan ask for the same thing in the glass — a crisp white with some body, like an Albariño or an unfiltered Sauvignon Blanc, handles fat and heat without backing down.

Ingredients

  • 500g large raw prawns, peeled
  • 6 tbsp olive oil
  • 4 garlic cloves, thinly sliced
  • 1 red chilli, thinly sliced (or ½ tsp chilli flakes)
  • 100ml dry white wine
  • Juice of 1 lemon
  • Large handful of parsley, roughly chopped
  • Flaky sea salt
  • Good bread for mopping

Method

  1. 11. Warm the olive oil in a large frying pan or cast-iron skillet over medium-high heat.
  2. 22. Add garlic and chilli, cook 30 seconds until the garlic just starts to turn gold — no more.
  3. 33. Turn the heat to high, add the prawns in a single layer. Cook 1 minute without stirring.
  4. 44. Flip, pour in the wine and lemon juice. Let it bubble 2 minutes until the prawns are pink and cooked through.
  5. 55. Take off the heat, scatter with parsley and sea salt.
  6. 66. Serve in the pan with bread to mop up the juices.
